Stir-fried Beef with Oyster Sauce

• 1500g steak well prepared against the grain
• 3 cloves garlic (or 2 slices of fresh ginger)
• 3 scallions (or 5 onion leaves)
• 5 tablespoons oyster sauce
• 1.5 teaspoons salt
• 3 teaspoons sugar
• 1 teaspoon black pepper
• 1 cup of broth (or water)
• 6 teaspoons cornstarch
• 3 teaspoons soy sauce
• Cut the beef "against the grain" thinly.
• Crush the garlic cloves.
• Chop the onions roughly.
• Mix in a cup the spring onions, oyster sauce, salt, sugar, black pepper and broth.
• Mix in a second cup the cornstarch, soy sauce and 2 tablespoons of water.
• Heat over medium heat in a pan two tablespoons of peanut oil. When the oil is hot, add the garlic and fry for 30 seconds.
• Add the beef and let it fry for 3 min., stirring occasionally.
• Add the contents of the first cup, stir quickly, then cover and cook for 1 min.
• Then add the second cup of mixture and turn gently with a spatula until thickened.
• Serve immediately. Garnish with blanched almonds, toasted (optional).
