1 Eggplant
Waitrose Sunflower Oil
Cloves of Chopped Garlic
Freshly Chopped Parsley
Fresh Basil Leaves

Fry eggplants, chop garlic, set aside.
Boil pasta for 8 mins.
Heat oil, and add fried eggplant and garlic.
Add arrabbiata sauce and basil.
Add cooked pasta, parsley, and parmesan. Mix them all together.
Season with salt, pepper, and olive oil.
Serve with extra Parmigiano on top.
